Southwest Chicken Salad

One thing that I have found on my journey to live a healthier lifestyle, is being able to have the foods I love but with cleaner ingredients. We dedicate Thursday nights to something Southwest. This week it was this Southwest Chicken Salad with homemade Avocado Cilantro Lime Dressing. I lost count how many times we have used Cilantro in our recipes. It adds a flavorsome addition to soups, salads, and homemade dressings. This recipe has definitely become a family favorite.

Mason Jars come in handy for a great place to store homemade salad dressing in.

Southwest Chicken Salad

  • 4 Organic Chicken Breasts
  • 1 TBSP Extra Virgin Olive Oil
  • 1 TSP Salt
  • 1 TSP Black Pepper 
  • 1 TSP Ground Cumin
  • 1 TSP Ground Coriander 
  • 1 TSP Paprika
  • 1 TSP Mustard Seed
  • 1 TSP Chili Powder
  • 1 TSP Onion Powder 
  • 1 TSP Garlic Powder 
  • 1 TSP Cayene Pepper 
  • ½ of a white onion. Chopped up
  • 1 Cup of organic black beans, cooked
  • 1 cup of organic corn, cooked
  • 5 sweet peppers chopped up
  • ½ tomato, chopped (optional)
  • 1 ounce White cheddar cheese, shredded

Avocado Cilantro Lime Dressing


4 Organic Boneless, skinless Chicken Breasts (I bake them in a glass baking pan with about a tbsp. of extra virgin olive oil on the bottom of the pan and then season them with salt, pepper, cumin, coriander, coconut aminos, paprika, mustard seed, chili powder,onion powder, garlic powder, and cayenne pepper).

Then I bake it at 375 degrees for about 45 minutes.

Blend all the dressing ingredients in a blender or chopper.  Add additional servings of ingredients to get desired taste. 

Once the chicken has cook, take the chopped heart of romaine and lay it on the bottom of the bowl, add sweet peppers, onions, tomatoes (we did not use them this time), ½ cup of cooked black beans, ½ cup of organic or non-GMO cooked corn, cooked chicken, shredded cheese, and then add dressing and serve.
