9 Plant-based Instant Pot Dinner Ideas

When I think of Instant Pot recipes, I not only think of saving time but especially during fall and winter month, they are a great kitchen tool to have on hand to create some amazing plant-based recipes that help keep you warm and healthy all in one.

Normally I post our recipes on the blog that we create in our own kitchen, but I also know that there are some other amazing food bloggers out there that have some amazing dishes that I wanted to share that I know your family will love.

When I create a recipe, rarely is it one that my boys have not tested and approved, so as a mom, I know how important it is for you to find quick and healthy meals your whole family will love.

So, when I compiled this list of plant-based Instant Pot recipes from other food bloggers, they had to be recipes we would make in our own kitchen.   

There is no question that we love black beans in our home and this Chipotle Black Bean Chili recipe  from My Plant-based Family is just the perfect dish to start off our collection.

Okay so she had me at avocado!

What I love about this recipe is that it uses all real food ingredients and is the perfect meal for these cold fall days.  Like our family, living a plant-based lifestyle has also been an integral part for Holly and her family over at My Plant-based Family and they have seen the benefits adapting a plant-based lifestyle can have on their health. 

The next plant-based Instant Pot recipe comes from Deryn over at Running on Real Food. Deryn is another plant-based food blogger who loves creating simple, delicious, and healthy recipes that help you thrive.  Her Instant Pot Kale Potato Soup  is one that is perfect for this fall weather.  

Two things that I love about this recipe is that it is made using no oils and its is full of one of my favorite green foods, kale. Whether you are plant-based or vegan, this dish is sure to become a family favorite. 

Did someone say Instant Pot Tacos? These Healthy Instant Pot Tacos  from Sonja and Alex over at A Couple Cooks are plant-based and sure to have your mouth watering.

If you are like me and tacos are life then you will love this recipe made using lentils and rice. And the great thing is that everyone can chose their own toppings. I would definitely add avocado to the top. What toppings would you add?

Who doesn’t love a good mac n cheese and especially a vegan mac n cheese?  Going plant-based has truly been a blessing to me and my family, so we are always looking to swap out for non-dairy options for meals we used to enjoy when we were solely a clean eating family.  This Instant Pot Vegan Mac N’ Cheese  from Detoxinista  is what I am talking about.

Since going plant-based raw cashews have been a staple in a lot of our dishes and I love that she uses them for this recipe.  Just like this dish might be served at her Thanksgiving Dinner, you will most likely see it on our dinner table this holiday season too.   

Cooking artichokes is one my list of things I want to accomplish before the year is up.  I know those are some big goals, right? But in all seriousness, for some reason since I was in undergraduate school cooking artichokes for some reason has intimidated me. I remember my roommate my senior year making them and I don’t know if it was because we never had them growing up, but that is all about to change since I found this Instant Pot Artichoke recipe from Rachel over at Eazy Peazy Mealz

She makes making artichokes so easy that even a novice can do it.  I cannot wait to whip up a quick batch of them and use them to make this Vegan Spinach Artichoke Dip from Julie over at the Simple Veganista. You can see this and her other vegan recipes at Simple Veganista 

When I was searching for recipes to add to this list of Plant-based Instant Pot Dinner Ideas, I wanted to make sure each of the recipes I shared contained foods that are plant-based and oil-free. 

Finding recipes like this Vegan Instant Pot Italian Pasta from The Vegan 8 is an example of ingredients that I would make in my own kitchen.  While it is titled as a Vegan dish, all the ingredients are ones that are also plant-based approved.  

Pasta is another food we cannot get enough of in our house.

Before switching to plant-based, carbs were something I was told by dieticians in past to keep to a minimum.  Since going plant-based we started adding back in whole grain pasta, and to be honest with you as a family we have shed more weight and feel better then when we were “watching” our carb intake. 

It cannot get any easier than this Instant Pot Baked Potato recipe  from Clean Eating Kitchen.  This recipe is only two ingredients and is a quick way to enjoy a staple food in the plant-based diet.

I could not put together a list plant-based Instant Pot Dinner Ideas and not include one from the source that helped inspire our family to adapt plant-based lifestyle.

Along with my husband’s physician, the documentary Forks over Knives  was instrumental in helping our family move from a clean eating lifestyle to a plant-based lifestyle.

This Harvest Vegetable Instant Pot Minestrone made the list not only because it is made from all real food ingredients, it is also kid-approved and for this mom of two teenage boys, that seal of approval is everything.
