Personal Tortilla Pizzas are a family favorite of ours. The fun part is choosing the toppings. For a while now Friday dinner has been declared Pizza Friday in our home. These Personal Corn Tortilla Pizzas make for a great alternative to the traditional pizza because everyone can choose their own toppings.
You can chose from a variety of toppings including Canadian Bacon and Sausage (to keep it a clean, they should be free of nitrates), Hamburger meat, BBQ Chicken (Tessemaes has a great flavored BBQ Sauce), Bell Peppers, Sweet Peppers, Pineapple, Spinach, Cheese, Red Onions, mushrooms, olives, and tomatoes.
Just most recently we had a Taco Personal Corn Tortilla using pinto re-fried beans, portobello mushrooms, and our homemade Pico de Gallo smothered on top.
As a Pizza sauce we like to use Muir Glenn Organic Pizza Sauce. We add salt, pepper, oregano, parsley, thyme, basil, and chives to give it a little more flavor.
For the corn tortillas, we prefer Three Sisters Nixtamal Corn Tortillas because the only ingredients in them are Organic Corn, Lime, and Salt. I just got my new tortilla press delivered this week, and I am excited to start making my own corn tortillas from scratch.
We first get the tortilla crisp by baking it in the oven at 375 degrees for about 10-15 min. Flipping them over after about 7 minutes. During that time, we prepare and cut up the ingredients) and cook the homemade sauce over medium heat. Start by adding your sauce, whether it is pizza sauce or re-fried beans, it should be the first layer on your corn tortilla. Then add your toppings and place the personal pizzas back in the oven and cook for about another 5-10 minutes, and then serve.
The best part about these Personal Tortilla Pizzas are the kids have a blast making them and you can try a new theme each week.
