These two ingredients are strawberry Popsicles are dairy-free and free of refined sugar, and are a great summertime vegan plant based gluten-free treat the whole family will love.

They make a great healthy snack option. The kids will have a great time helping you make and eat them, too.

I found that it is best to use frozen strawberries as they blend better with almond milk. You can also use fresh strawberries as well.

Here is what you will need to make this recipe:

2 Cups of Frozen Strawberries

2 Cups of Unsweetened Almond Milk

Instructions:

Place all the ingredients in the blender.

Blend until smooth.

Add the mixture to a popsicle mold.

Freeze overnight and enjoy!

Finding plant-based breakfast foods that are quick and easy to make can help create healthy habits to start off the day.

When I first started my health journey, one thing that helped me was throwing out the idea I had to eat, so-called breakfast foods for breakfast. Since doing that, it has helped open my options and helped me get bored with the same foods every day.

One thing I love to do is eat salads and sweet potatoes for breakfast. They are a great way to get in nutrient dense foods and help keep me feeling full.

Here are some quick and easy breakfast recipes you can enjoy for breakfast, lunch, or dinner.

As summer approaches, so do the upcoming potlucks, weddings, and gatherings. but what do you do when there might not be plant-based vegan options there?

Here are 3 tips that have been helpful to me when we are attending an event that have helped me stay on track with my health goals.

1. Eat before you go to the event.

2. Depending on the relationship with the person who is hosting the event and what they are cooking, you could always ask them to veganise a few dishes. If they are unable to do that, you can always ask the host if you can bring a couple plant-based or vegan dishes to share.

3. Host the event yourself. This is something we have done this past couple of summers and a great way to share the dishes in our meal planner with your family and friends.

Whether you are hosting an event or attending an event, planning ahead is a great way to ensure you can stay on track with your health goals.

Asparagus is a superfood that packs a nutritional punch! It's high in fiber, vitamins A, C, E, and K, as well as folate and iron.

Plus, it's low in calories and fat-free! 🌱

If you're looking for ways to cook asparagus oil-free, try roasting it in the oven with a sprinkle of garlic powder and lemon juice.

You can also steam it for a few minutes and top with your favorite herbs and spices.

My favorite to add is garlic powder, onion powder, and smoked paprika

Here is another delicious infused water recipe that is great if you are transitioning into drinking more water or struggle to get in your water daily!

Strawberry, Kiwi, and Mint Infused Water

Ingredients
• 4-6 big strawberries
• 1/2 of a kiwi
• 1 Cup of Fresh Mint
• Water
• 1 Pitcher or large Mason jar.

Instructions
1. Slice your kiwi in half and peel the half you are using.
2. Thinly slice your strawberries and peeled kiwi.
3. Add strawberry and kiwi slices and mint to your your pitcher. Fill with water. Add ice (optional), serve and enjoy!

I love using ingredients to make more than one dish.

Today's lunch I made Roasted Vegetable and Red Pepper Hummus, and it was the perfect combination.

It was not until I went plant-based and started making my own hummus that I started liking it. The store bought versions I had in the past. it just does not compare to making my own.

Below are the recipes so you can make this delicious dish yourself.

Roasted Vegetables and Red Pepper Hummus:
Ingredients:
1 cup cauliflower florets
2 cups, brussels sprouts, trimmed
1 medium sweet potato, diced
1 tbsp vegetable broth
1 tsp Sweet Basil
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1/8 tsp Sea Salt & Black Pepper (to taste (optional)

Notes:
I roasted the red pepper along with the other vegetables and then added them to the blender to make the hummus.

Directions
1. Preheat the ovent to 425° F and line a baking sheet with parchment paper.

2. Add all ingredients to a large mixing bowl, and mix together until all the vegetables are lightly coated.

3. Add the vegetables on the baking sheet and bake for approximately 20-25 minutes until sweet potatoes are tender. Remove from oven, serve, and enjoy!

1 can (15ounces) chickpeas (and water inside)
1/2 red pepper, sliced
1 tbsp Tahini
2 garlic cloves, peeled
1/2 Roasted Red Pepper (see recipe above)
1 Lemon, squeezed
Salt to taste (optional)
Paprika or smoke paprika to garnish (optional)

Directions:
Add all the ingredients to a blender or food processor. Blend until combined. Store in a glass mason jar or serve on your favorite dish.

Here are 3 things you can do to create delicious and nutritious dishes your kids will love. ⁠

1. Add vegetables to their favorite pasta dishes. One thing you can do is blend up vegetables along with your spaghetti sauce. ⁠

2. Make a Snackboard with the kids and let them add their favorite vegetables. Don't forget the dip. This is also a great way to add in some more vegetables to the dish. ⁠
