Salads are my favorite. 

Today's lunch was a delicious mix of greens, cucumbers, tomatoes, cabbage, bell peppers, brown rice, and my favorite, sweet potatoes topped with a homemade vegan honey mustard dressing. 

Vegan Honey Mustard Dressing Recipe:

1/4 cup dijon mustard (or you can use yellow mustard)

2 Tbsp of pure maple syrup 

Directions: Add all the ingredients to a jar and mix together until smooth. 

Enjoy!

This year we had some new plant-based dishes for the holidays and got to try out a few from my new favorite cookbooks.

Last night we had Belly Warming Minestrone Soup and gravy from the @plantyou  cookbook. Cornbread from @shaneandsimplecooking website.

 Mashed potatoes and then also made a citrus salad with citrus dressing. 

For breakfast, we enjoyed some vegan Pumpkin waffles. 

Saturday I made oil-free vegan fried rice with soy curl vegan orange chicken and stir fry noodles and made Teriyaki sauce from the @goplantstrong PlantStock 2022 e-cookbook by @jane_esselstyn_rn and Anne Esselstyn. 

We also enjoyed a Veggie snack board earlier in the day with our oil-free hummus and peanut sauce. 

Everything was delicious and was a great way to enjoy time with the family.

Hummus not only makes a great dip, it can be used as a salad dressing. 

It is a great way to get in additional protein into your dish.

I did not like hummus until I started making our own.

We created one that is oil-free and quick and easy to make.

It's #nationalpumpkinday today and we think there is no better way to celebrate it than with our Vegan Pumpkin Mac n Cheese. 

Yes, ypu heard me right, I did say pumpkin mac n cheese. 

I know, the first time I heard of it, I said, no way, but then we made it and it was so delicious. 

Our recipe uses just enough pumpkin puree and spices that it gives it a pumpkin flavor without overwhelming the dish.

We had some friends over for dinner last night and made @plantyou's Belly-warming Minestrone Soup from her new cookbook, vegan cornbread made using a recipe from @shaneandsimplecooking , and homemade salad with some of our favorite oil-free plant-based dressings. I always get nervous cooking for our non-vegan family and friends, but could not believe the compliments I got on the dinner I served last night. 

Everything was absolutely delicious and the perfect way to  enjoy a great evening.
