We are always looking for vegan and plant recipes to share with you and this is definitely one that we are very proud of.
Before going vegan and plant based last year, we used to make pesto sauce using shredded parmesan cheese and oils, but this by far takes the cake.
It not only has less fat and calories than the dairy ones, it takes better and is full of whole food plant based foods that help nourish your body.
Only 7 Ingredients needed:
- 1 Cup of Fresh Basil
- 1 Cup Pinenuts, rinsed
- 1/2 Cup Nutritional Yeast
- 1 Medium Lemon, squeezed
- 7 Medium Garlic Cloves
- 1 TSP Salt
- Water as needed
Add all the ingredients to your blender or food processor and blend until smooth. If it is too thick you can add additional water until reach desired consistency. Add additional ingredients to your taste.
You can also use cashews in place of pinenuts or a combo of both. There was also one time that I made this recipe and I was unable to get enough fresh basil, so I added some baby spinach to the recipe and it actually turned out great.
Leftovers
To make a larger batch just double or triple the ingredients. This sauce makes a great vegan and plant based dressing to enjoy with your favorite salad or power bowl. You can store the leftovers in an air tight container in the refrigerator for up to 5 days.
Enjoy!
