There is no question that I love Power Bowls.
If you have followed me on the Clean Food Mama Instagram page, you know that I love posting all my Power Bowl dishes. I mean who does not love eating the rainbow.
As a mom of two teenage boys, power bowls are a great dish that is easy to make and everyone gets to pick their favorite ingredients.
When I created this Garbanzo Bean Power Bowl, all I had in mind was how to I create a protein-rich dish without having to spend too much time in the kitchen?
I mean I love spending time in the kitchen, but on this particular day, I was looking for something that was simple and easy, but had all the great flavors we had become accustomed to since going more plant-based.
As always, I love to layer the bottom of my power bowls with spinach.
This Garbanzo Bean Power Bowl is then topped with garbanzo beans, tomatoes, sweet potatoes, mushrooms, yellow and orange peppers, cilantro red cabbage, cucumbers, onions, avocados, flax seeds, pumpkin seeds, and sprinkled with lime juice.
Garbanzo Bean Power Bowl Ingredients
2 Cups spinach
1/2 Cup Garbanzo Beans
1/4 Cup Cucumbers, sliced
1/4 Cup Orange peppers, chopped
1/4 Cup Yellow peppers, chopped
5-6 Grape tomatoes
2-3 Mushrooms, sliced
1/4 Cup red cabbage, chopped
1/4 Cup red onions, chopped
1/4 Cup cilantro, leaves only,
chopped
2 TBSP Raw Pumpkin Seeds
2 TBSP Flax Seeds
1 Avocado, pitted, and sliced
1/2 Lime squeezed and 1 slice for garnish
Instructions:
Rinse and drain garbanzo beans from the can, layer the bottom of the bowl with spinach and layer the other ingredients around the spinach, squeeze the lime over the top and serve.
No need for a dressing on this one. The garbanzo beans and avocados blend nicely together to create a smooth consistency and a great alternative to a dressing, but if you are looking for a dressing to enjoy this dish with, I might suggest our Cashew Ranch Dressing that is oil-free and dairy-free.
