Wild Rice and Black Bean Power Bowl with Cilantro Lime Dressing

This Wild Rice and Black Bean Power Bowl is one of my favorite Power Bowl recipes to make. Not only is it plant-based, but it is oh so delicious. Made using organic wild rice. Japanese sweet potatoes, and black beans, this dish is a protein powerhouse.

The only equipment you will need to make this dish is

Wild Rice and Sweet Potato Power Bowl

Ingredients:

  • 2 Cups Spinach
  • 1 Cup Japanese Sweet Potatoes,
  • chopped
  • 1/2 15-oz can of Black Beans
  • 1/2 Cup Wild Rice
  • 2 Mini Sweet Peppers (Variety of
  • colors), chopped
  • 1/4 Cup Green Onion, diced
  • 1/4 Cup Green Pepper
  • 1/4 Cucumber, sliced
  • 1/4 Red Cabbage, diced
  • 1 Radish, sliced
  • 1/4 Roma tomato, diced
  • 1/4 Portobello Mushroom, chopped
  • 1/4 Cup of Cilantro, leaved, and
  • chopped
  • 1/2 Avocado, peeled, seeded, and
  • halved
  • 1 TBSP Raw Pumpkin Seeds
  • 1 TBSP Flax Seed
  • 1 TSP Black Pepper
Wild Rice and Sweet Potato Power Bowl Ingredients

Instructions

  • In a rice cooker, add in 1/2 Cup of Wild Rice and a cup of water. Chose quick cook. Depending on your rice cooker, this should take about 20 minutes. Let rice cook and set aside.
  • In a small sauce pan add in 1 chopped sweet potato and water and cook on high for about 15 minutes. Drain water and set aside.
  • In a small sauce pan place 1/2 can of black beans, cook on medium high for about 5-7 minutes, set aside.
  • In a large bowl layer the bottom with spinach, then add on top along the side the rice, sweet potatoes, and black beans.
  • Then add in the remaining vegetables, and nuts/seeds along the sides and top with the avocado half, and sprinkle some pepper over the avocado.
  • Drizzle with some of the Cilantro Lime Dressing and serve.

Storage not recommended for the Power Bowl itself.

Chose to serve it with our Cilantro Lime Dressing or any one of our other plant-based dressings.

Cilantro Lime Dressing

Ingredients

  • 1/2 Bunch of Cilantro, leaved,
  • chopped
  • 1/2 Cup Nutritional Yeast
  • 4 Garlic cloves, peeled
  • 1 Lime, squeezed
  • 1 Avocado, peeled, seeded
  • 1/2 White onion
  • 1/2 Jalapeno, seeded
  • 1 TSP Apple Cider Vinegar
  • 1 TSP Garlic Powder
  • 1 TSP Onion Powder
  • Salt and Pepper to taste

Instructions:

Add all the ingredients together in a blender or food processor. Blend until smooth and creamy. Add in extra spices based on taste and serve.

This Wild Rice and Sweet Potato Power Bowl recipe includes some of my favorite ingredients including flax seeds that are a great source of plant-based Omega-3 fats and are a great source of dietary fiber and has been known to help improve cholesterol and reduce blood sugar.
